this is a unique processing method which involve fresh papaya pulp and fermented in a close bag  by observing the PH rate. once it reach a desire fermented hours it will be go sundry on a raise bed .

in order to preserve the papaya processing flavor note , we roasted in a medium light roast for all the coffee lover and drinker have a closer approach for this processing taste note.
